A leech is a low tier creature that is commonly found in the 
hills, 
ruins, 
jungles, and 
Rust Wells. They can also sometimes be found in 
leech farmer pens at the 
Stiltgrounds.
A 
leech corpse is one of several corpses that can be required as part of the fungal cure.
Notably, they can be detected by 
Sense Psychic, as their life-draining ability is a mutation, even though some players may assume it's a natural ability.
