mutating is an effect that is caused by getting hit by a
gamma moth's
mutating gaze. After some period of time, mutation points, a defect, or a mutation will be gained.
Mutating Result
If a creature is mutating due to a
gamma moth, there will be an incubation period of 100 player turns before the full effects appear.[1] Once these 100 turns are up, there is a chance of either gaining a new mutation, defect, or mutation points.

Chimera and Esper does not alter what kind of mutations are gained from this.
If the mutating creature already has all mutations in a specific category (all mutations or all defects), and that category is chosen, the mutation result will do nothing.
